Blueberry Brie Bites

A bite so glorious. What's a better pairing than gooey brie & sweet jam? You NEED these at your Thanksgiving table. They are so easy and so delicious..they just SCREAM Holiday! Did I mention there's only THREE ingredients? An appetizer this cute will not last long so make sure you hide a few in your pocket for later.

Now. Puffed Pastry. It's a packaged ingredient that can make anything feel upgraded. You can use it for just about anything and it takes the dish to a new level. It's buttery, flaky and makes for such a presentation. And by presentation...it puffs up so beautifully. I ended up rolling my puffed pastry sheet out because I didn't want the bites to come out "too puffy" this also helped in making MORE bites. Win. Win.

So this is how much I rolled it out, not too crazy. I then used a pizza cutter to cut out 1 inch squares. You can cut the sheet into any shapes you want, just make sure it fits your mold. Also..make sure to GREASE your mold. The jam will bubble over and it will caramelize in your pan so make sure to grease, grease, grease! I used a mini cupcake pan to make the bites! I thew in cubed Brie and a little dollop of blueberry jam. Because we are using a few ingredients, make sure you use quality ingredients. I used a really good, organic blueberry jam that I found at a market. I loved that the blueberries were still whole in the jam, making for a nice rustic look to these bites. 

And after a nice bake, look how cute they are! Nice and golden..bubbly and gooey. This is such an easy app, this will surely WOW your guests.

Blueberry Brie Bites

yield: 60-70 bites

prep time: 5 minutes

cook time: 15 minutes

 

Ingredients:

  • 1 box of frozen puffed pastry sheets (2 sheets) thawed for 20 minutes (I used Pepperidge Farm)

  • 8 ounces of Brie cut into small cubes (I used President)

  • Good Blueberry Jam - or your favorite!

Directions:

  1. Preheat oven to 375 degrees and grease a mini cupcake pan, set aside.

  2. Roll out the thawed sheets of puffed pastry (see pictures above) and cut into 1 inch squares using a knife or pizza cutter. 

  3. Place your cut puffed pastry squares into the mini cupake pan.

  4. Top with cubed brie and a little bit of jam and bake for 15-20 minutes until golden and bubbly. Repeat until all puffed pastry is used. The more mini cupcake pans you have the better ;) 

  5. ENJOY!!!
