Frosted Gingerbread Donuts
Literally, one blink and it went from Summer to Christmas. Where has the time gone? How is the year 2020 here??? The month, where life changes are to go into effect, is right around the corner. Good ol January. What are your new years resolutions? I have to begin wedding planning so I'm planning to make the gym a part of my weekly routines come the new year. And of course..shed some weight, which I feel is on everyones "to do" list. But UNTIL then...here are some donuts. Just what you need for the ending of this year!
I have fried donuts before but I really love a nice baked donut. Although it's still a donut...something about baking instead of frying gives me a less guilt feeling. I mean, donuts are healthy-ish right?
This donut is filled with spices and molasses to give a nice rich gingerbread taste. It's also hiding a secret ingredient.
The eggnog is totally optional, I know there are some nog lovers out there and some nog haters. So if you don't want the nog just sub in milk or heavy cream. I added some nog to the batter itself and to the icing. It just makes the donut more special and adds some depth.
I could have just eaten these donuts right out of the pan. The aromatics really put you in this wonderful, warm, head space. I wish I could put it into a candle.
But we aren't stopping...we glaze and garnish. I used some crushed up gingerbread cookies for the crumb topping, it added such a nice pop and crunch. Are these like, not the cutest?!

Frosted Gingerbread Donuts
yield: 9 donuts
prep time: 10 minutes
cook time: 10-12 minutes
1 c flour
pinch of salt
1/8 tsp ground all spice
1/8 tsp ground nutmeg
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp baking soda
1 tsp baking powder
1 egg room temp
2 1/2 Tbs molasses
1/2 c light brown sugar
1/3 c eggnog or milk
1/4 c vegetable oil
1 c powdered sugar
dash of cinnamon
3 Tbs eggnog or milk (+ more if needed depending on consistency desired)

Preheat oven to 350 degrees and heavily grease a donut pan. Set aside.
In a bowl using a whisk or wooden spoon, combine all gingerbread donut ingredients and mix together until combined.
Dump your dough into a large ziplock baggie, cut off the tip, and pipe into the donut pan. See pictures above to see how much I put into each mold. You can also use a spoon to fill the donut molds but I found piping is much easier.
Bake the donuts for about 10 minutes until toothpick comes out clean. Let cool for a couple minutes then dump out onto a clean surface to continue to cool. The tops of the donut will be a little sticky so if you put them top side down the top layer might come off onto your work surface - just a note.
While the donuts cool whisk together the frosting ingredients.
Drizzle the frosting over your cooled donuts or dip your donuts in.
Garnish with some crushed gingerbread cookies.
