Bone broth doesn't exactly sound like something that's jaw drop worthy. It's kind of intense, actually. I mean...a liquid that's made of simmered bones....

Ok i'll stop. LOL.

BUT, the benefits of bone broth are so incredible. It's filled with nutrients, can help with reducing inflammation and heal the gut, can aid in sleep and support in weight loss. It's the shit.

I typically get mine from the store, canned or boxed. But I really wanted to make a homemade broth full of as much flavor as possible. I also just so happened to have a chicken carcass. Again another lovely image.

I made a whole roasted chicken (which you can find here) for dinner one night and had the carcass leftover. What else would I do with a carcass? MAKE BROTH!

So, in my largest pot I threw a bunch of stuff in. This is what makes this amazing, you really don't need to measure a thing. Just have some earthy veggies and herbs and you've got yourself a good base for your broth. The carcass still had some meat on it which, in my opinion, gave this broth more flavor so don't be afraid to use some meat!

I added in celery, onions, carrots, garlic, bay leaves, chives, lots of salt and pepper and called it a day. I didn't use fresh parsley in this because I did not have any on hand - but you would never know this. Use what ya got and have fun with it!

Fill the pot up with as much water as possible, let it simmer all day long, and then boom. Chicken broth. It's really just that easy. Plus, your house will smell like Thanksgiving. Somebody make this into a candle plz!!

You'll want to strain this, of course. And just throw out the lumps of bones and veggies. We're breaking up with them. It's not us, it's them.

I kept my broth in the fridge for about a week in tightly sealed mason jars. If you don't plan on using your broth all at once or just not yet, make sure to freeze it. It will last about a month or so in the freezer.

This is the perfect base for a homemade chicken noodle soup! Or just to have on a cold rainy morning. Or if you're sick. Or if you just want some extra nutrients!! Or for, just because, moments.

Homemade Chicken Broth

yield: about 9 cups

prep time: 5 minutes

cook time: 6-8 hours


  • Chicken Carcass

  • Celery + leaves

  • Garlic Cloves (smashed)

  • Bay Leaves (I used 2)

  • Carrots (some I cut some I left whole)

  • 2 onions cut (leave on the skin and roots)

  • Chives

  • Lots of salt and pepper

  • Dried Parsley (since I did not have fresh)

  • Water


  1. In a large pot throw in all of your ingredients and fill with water. This is a "use what ya got" kind of recipe so there are no measurements.

  2. Over medium-high heat, bring the pot to a boil then reduce to medium-low and let simmer for 6-8 hours. The longer the better.

  3. Once your broth is done simmering all day, taste for seasoning. I used more salt than I thought I would.

  4. Then, strain the broth and transfer to containers or glass jars. This can be kept in the fridge for up to a week or can be freezed for up to a month.

  5. ENJOY!!
