MAN. You ever look back at a picture and then you instantly get hit with feels? I remember this morning that I made this dish....I was on Whole30 and DAMN was this hash good. I'm in that feels moment.

I know what you're thinkin, where the hell is the drippy egg?

Friends, the egg wasn't invited.

But I am working on this. I had a terrible relationship with eggs - I just hated them. It;'s been years. But... I am slowly OK with them. I like them crispy fried or in a sandwich or taco of some sort. A drip egg would be perfect to round out this Whole30 dish, so if you are an egg lover... DO IT.

The base of this recipe is some crispy fried potatoes. My tip to you, cook them separate. I diced up some potatoes..you can really use any kind, and I pan fried them until crispy and then I set them aside.

The additives to the hash. thinly sliced brussels and chopped HOT DOGS. I used Applegate organic hot dogs (which are whole30 approved) and it was just GREAT. I really enjoy bacon if we're talking pork... but the hot dog was a nice twist to add to the hash.

To round back to why I cook the potatoes separate.....if you were to cook all of it together it would not be crispy, it would just come out "soft" so at the end I mix everything together just before serving so you still get that crispy potato.

I will say...I did love the food on Whole30. I even felt the best I had ever felt! So if you are looking for a "restart" or a "refresh" I would definitely recommend trying it. A quick summary - you take out all grains, dairy, added sugars, alcohol and legumes from your diet.

Sounds like just about everything huh?

But trust me, it is easy once you get the hang of it. Plus who wouldn't want to wake up to a brussel hash?!

Brussel Hash

yield: 2-3

prep time: 5-10 minutes

cook time: 20-25 minutes


  • 1 1/4 c diced potatoes (I used russet but you can use any kind - fresh not frozen)

  • 1 1/2 Tbs Avocado Oil or EVOO

  • 3/4 c shredded brussel sprouts

  • 1 Organic Apple Gate Hot Dog, sliced and cut into pieces

  • 1 garlic clove finely minced or pressed

  • Salt & Pepper to season


  1. In a saute pan over medium high heat add in your oil and cook potatoes until crispy and cooked through, about 10-15 minutes.

  2. Place potatoes on a paper towel to drain, set aside.

  3. In the same pan add in your shredded brussels, garlic and chopped hot dog.

  4. Cook until brussels are wilted and hot dog starts to brown, about 5-10 minutes.

  5. When ready to serve, combine the crispy potatoes with your brussel/hot dog mixture, season to taste and serve hot!

  6. ENJOY!
