I'm not sure if you guys are ready for this. I wasn't even ready for this.
So Saturday morning I wanted to make something baddd for my blog. Not bad as in bad but bad as in, do it when nobody is looking, bad. And to me that's cheese sauce.
And when I think of cheese sauce, I think of the infamous Chickie's and Pete's cheese sauce. It's like crack.
As I laid in bed staring at the ceiling - thinking, I asked my fiance what kind of fry I should go with? Should I go traditional crinkle crab fries? Or should I do something different? And he said, DO WAFFLE! And I was SOLD.
So, for the cheese. It's really so simple. You need a good American Cheese....and what better than Cooper Sharp?? Cooper Sharp is bae. Did you know you can get it cut into a giant block?? Because I sure as hell didn't
I always get fresh sliced cheese at the deli but I don't know what it is about the block - it's like extra fresh. I mean look at it. Look how fresh and delicious it freakin looks. So if you have the option to get a "chunk" of Cooper Sharp, DO IT. If your deli only does slices, that will work too. We are melting it, after all.
Step 1. Cheese + water
Step 2 - mix occasionally over low heat.
Step 3 - keep mixing.
Step 4 - drool over it. The pond of heaven. You can lead a horse to this pond and you bet your ass it will drink it.
And now the finished product. For the fries, so easy - use frozen! I used my air fryer and they came out beyond lovely. If you don't have an air fryer, baking them will be just as good! I just feel the air fryer makes frozen fries so much crispier than the oven and the air fryer cuts the time in half. It only took 10 minutes to get these golden brown. & once fried, heavily dose in old bay seasoning.
As soon as I dipped the fry and smelled the old bay, I closed my eyes. I ate the cheesy dipped seasoned fry and I felt like I was foreal at Chickie's. Who would have thought it was THIS EASY??? Now you can have Chickie's fries ANY TIME YOU WANT. This recipe is spot on exact, if not better and you're welcome.
Chickie's & Pete's Crab Fries
yield: the limit does not exist
prep time: 5 minutes
cook time: 20 minutes
1/2 pound Cooper Sharp Cheese cubed
3/4 c + 1 Tbs water (may need more depending on how thin you want the sauce)
1 bag frozen waffle fries (I used Idaho)
Old Bay Seasoning
In a small pot over medium low heat add in your water and cubed cheese. Stir until sauce begins to melt and all lumps are gone. I switched to a whisk once the sauce was almost fully melted.
Meanwhile cook your fries until crisp! I used an air fryer at 400 for 10-15 minutes, shaking halfway through.
Once sauce is hot and fully melted turn off the heat but keep on the burner.
When fries are done season heavily with Old Bay.
Pour the hot cheese sauce into small ramekins, serve immediately with the hot seasoned fries
