Healthy Buffalo Chicken Pizza


So....

how's everyone been? laying back, watching all movies and shows possible? running around scheduling the days for your kiddos? working hard because your job is essential? hugs to you guys.. I feel for those who still have to go into work in a time like this... & for those who have the ability to do their job from home are extremely lucky...I happen to be one of those people! I have been working from home since early March, hence why no posts lately. It's just been - weird? the world feels weird and I've been thrown out of my rhythm. I've been eating like a mad woman too, being home all day every day... I get the boredom munchies, who's with me? I'm working on adjusting to a healthier lifestyle and becoming more active, going on long walks and at home workouts. And although you might be thinking, a pizza Carly? This isn't just any pizza...this is a macro friendly pizza!! So let's get to it!

The crust - which is a two ingredient dough. I love this crust because not only is it two ingredients but it's packed with protein! It's a mix of self rising flour and nonfat plain greek yogurt. No resting, no rising, just simplicity at it's finest. I blind baked the crust for about 3 minutes before putting the toppings on - it ensured a nice cooked crust since the toppings really just need to be warmed through. You don't have to blind bake but I liked the way the crust held up after baking plus I liked the little bubbles that formed to create some dimension.

And your toppings...cheeses, fresh cut celery and carrots, green onion and the star - ground chicken coated in hot sauce. You can surely use shredded chicken, cubed chicken, leftover wing chicken...any kind. Just make sure it's coated extra in hot sauce. I wasn't feeling shredded chicken so I went with ground chicken and I really love the way it came out, plus it was much easier to distribute evenly.

the colors...isn't it just fabulous? Celery on a pizza? Carrots on a pizza? I know...but it works, adds some nice crunch and you're getting your veggies in. I'm that person who orders wings and declines the celery and carrots and i'm ashamed of myself now. They just go together.

After it's baked I top with some celery leaves and fresh green onion for more color...maybe an extra drizzle of hot sauce because - come on. I am a Franks girl but i'm totally a Hanks girl too. Funny they have similar sounding names. So - I mixed the two, but use what ya got! Especially in times like this.

And for the final touch....because we can't have buffy chick without ranch or blue cheese! For macro friendly purposes, I drizzled over yogurt ranch. I'm usually a blue cheese alllllllll the way and across the street but when it comes to yogurt dressings, this ranch is by far one of the best tasting "healthy" dressings. Bolthouse Farms! Which i'm sure you've seen/had. It's delish.

Buffalo Chicken Pizza

yield: 4 servings

prep time: 10 minutes

cook time: 15 minutes

Ingredients:

  • 1 c Fage 0% Greek Yogurt

  • 1 c self rising flour

  • 1/2 pound cooked ground chicken (8oz raw)

  • 2 garlic cloves, pressed

  • 1/4 c Hanks Celanktro

  • 1/4 c Franks Hot Sauce

  • 40 g fresh chopped carrots

  • 70 g fresh chopped celery

  • 35 g sliced red onion

  • 20 g green onion

  • 56 g low moisture shredded mozzarella (1/2 c)

  • 56 g 6 cheese italian shredded cheese (1/2 c)

  • Bolthouse Farms Ranch

Directions:

  1. Preheat your oven to 400 degrees. (preheat with pizza stone if using one)

  2. In a bowl mix the flour and greek yogurt until well combined, set aside

  3. Combine the cooked ground chicken with hot sauces and fresh garlic, set aside.

  4. On a floured surface or floured pizza peel form your pizza dough into a circle or any shape desired. If not using a pizza stone, place the formed pizza dough on a baking sheet.

  5. Place your pizza dough in the oven or on the hot stone and bake for 3 minutes.

  6. Take out your blind baked dough and top with cheese, carrots, celery, red onion and buffalo chicken.

  7. Put the pizza back into the oven, increase the temperature to 450, and finish baking for another 10 minutes.

  8. Once done, top with sliced fresh green onion, yogurt ranch and a little drizzle extra of hot sauce and ENJOY!
