I feel like quarantine really helped iron out the little wrinkles in routine for me. It's going to be a struggle adapting back to the work life, going into the office each day. But, if I can accomplish that while still keeping my now every day routines in tact, I will truly feel accomplished. Eating has become one of my most practiced routines. I've found three times a day where I enjoy a nice meal works best. Sometimes I am snacking in between... but it's been a constant three meals and around the same time each day - and not to mention...I am feeling a lot better! I used to skip breakfast and fast, I guess.. and it was not something my body agreed with. I didn't realize that until this whole quarantine! As a small side note... I've been counting macros religiously and what has helped me so much is planning a day ahead each day...AND planning DELISH meals that I know I will look forward to. Nothing's worse than forcing down a three day old salad - am I right?
What I love most about macro counting is simply, nothings cut. You fit what you can (eating mindfully) and you are left off satisfied. Pasta and meatballs has that warm spot in my heart and I really wanted to bring a healthy meatball recipe to you that tastes like home.
This recipe is quick, simple and I am sure that you probably have most, if not all, of the ingredients already!
Dried herbs are used in this recipe because lets be real, quarantine.
I have herbs growing as we speak but they're still little babies so I had to use pantry spices!
A little tip when rolling the balls into their little perfect selves, I used some olive oil on my hands. Not only did this help with keeping it non-stickyyy but it helped coat them just a tad to help brown in the oven.
I know ovens are all different but when the meatballs were done I wanted them to be just a little bit more golden so I broiled them for a couple minutes, you may not need to but this is just a lil tip!
The smell of these is unreal. I think it's the cheese that really adds that special-ness. These are perfect just as is, for a party, potluck...date night dinner paired with some pasta...
Or dunked into your best marinara sauce. I mean c'mon...
I hope you love these just as much as I did!! This is the BEST chicken meatball recipe. Simple, sophisticated and downright delicious.
yield: 4 servings (20 meatballs)
prep time: 5 minutes
cook time: 20-25 minutes
1 pound raw ground chicken
1/4 c Parmesan Cheese
1 tsp dried basil
1 tsp dried oregano
1 Tbs dried onion powder
1/2 Tbs dried garlic powder
1/2 Tbs fresh minced garlic
1 large egg
1/3 c bread crumbs (30g)
Olive oil for hands when rolling
Preheat your oven to 400 degrees and line a baking sheet with parchment paper.
In a bowl combine all of your ingredients, mixing well.
Now you are ready to form! Using a 1 inch cookie scoop, scoop out 20 meatballs and place on your parchment lined baking sheet.
Once you have all your balls scooped, coat your hands in a little olive oil and roll each ball in your hands to form an even smooth exterior.
Once done, bake for 20 minutes and check - if your meatballs need a bit of color, broil for the last 3 minutes. This is different oven to oven, I baked mine for 20 minutes and broiled for the last 3 minutes.
Serve with spaghetti and sauce, or even with just a fork alone and ENJOY!!!
